The Best Vegetarian Pad Thai

This Pad Thai recipe looks a little daunting at first, but it's so fun to prep, easy to make, and absolutely delicious! There's a decent amount of chopping and setting up beforehand, but once you're cooking it's really just heating and mixing. It's hard to mess up!

If you don't care for spicy food, make the recipe as-is. Throwing in some chili flakes will give it a great kick if that's more your style.

This is also one of those dishes that somehow gets better as leftovers. You'll genuinely be craving this recipe the day after having it, and it won't disappoint! Simply microwaving the leftovers for 45 seconds will make it a perfect next-day lunch. That is... if there are any leftovers at all!
