Baked Eggplant Parmesan Medallions
This is an easy and straightforward recipe that produces a delicious and fancy-looking meal! Six ingredients are all it takes to create these medallions, with simple ingredients that can be found at your local grocery store. I decided to throw this together last night so that I could take photos of it (so that I could post the recipe today!) and had actually forgotten just how easy it is.
The recipe serves two, but it would be just as easy to double the recipe with a second eggplant and a little more cheese. I've never had leftovers of this before, so I can't say how good it is the next day. If you manage to not eat everything you make the first night, then let me know how it is as leftovers!
